Spicy, red, fiery - Schiacciata is the deliciously devilish version of Soppressata. It’s a salami for snacking, for robust wines, for lively get-togethers... In a sixth century theatrical farce we find King Carnival, sovereign of the Land of Plenty: Great glutton, ribald, drunkard, lascivious pig. Well, we like to imagine this King Carnival of peasant tradition enjoying slices of Schiacciata Piccante while he struggles not to submit to the Lenten fast. King Carnival fought to remain in power for a long time and died, according to Italian folklore, the victim of food and drink excesses of all kinds, overwhelmed by feasting in unimaginable abundance and by drinking in colossal quantities.
After all he was a pig. And it’s from the splendid local breed of pigs, that you get this devilish Schiacciata. It comes from the thigh meat, hand cut with very sharp knives, and is mixed together with cubed bacon fat. The curing is performed only with salt and chilli pepper. Put into natural sausage skins, the Schiacciata is left to age in the cellar for four months. Then it becomes an object of desire for feasting with friends, but also a wonderful salami to offer as a simple antipasto.
