Here we are at last: a classic Ricotta Salata from Catania. As well as its fresh form, ideal for use in desserts and pastries, ricotta is widely available throughout Sicily as salata, drained and matured for two to three months in well-aired locations.
You`ll love the flavour at the first bite. But to get the best out of it, releasing aromas and flavours of incredible sweetness, you need to grate the cheese into a cooked dish, for example the traditional Pasta alla Norma: spaghetti, tomato, fried aubergine or courgette, and a generous sprinkling of Ricotta Salata Di Mauro.
