Salami of the Cinta Senese by Falorni

It`s only thanks to the committed work of some breeders that this old pig breed, native of the land around Siena (in Tuscany), is still with us today, even if only with a few rare specimens. A white strip (cinta) around the chest, the withers, the shoulders and the lower limbs, has given it its name and its immediate recognizability.

An extremely fine sense of smell, and a long snout allow it to feed on roots and tubers; the ears, bent forwards and downwards, protect the eyes from bushes and brushwood. A race selected to live in the wild, the Cinta Senese pig is not suitable to be permanently locked in a sty.

The Cinta Senese is still an endangered species, in spite of the fact that some breeders managed to give continuity to the very few specimens remained.

The Macelleria Falorni, with a small breeding of their own, is among these.It`s one of those cases when gluttony becomes a good action, indeed. The quality beyond compare of this salami is due to few essential factors: about nutrition we already talked; our piggie is always running around freely, and muscular tone and fibres benefit from this, as well as fat parts, richer in unsaturated fats.

The only drawback: it costs a lot to rear these pigs and the yield is up to 40% lower than with standard pigs. So here`s why the price of these salami is twice as much as usual. And here`s the sense of your good action - you`re helping the protection and continuity of an endangered species.
