Organic Ricottina Scorza Nera (0.35 KG )
Ricotta “Black Peel” is obtained by ewe’s raw milk, its name derives from its colour peel. The serum is warmed up to 75°, then a small quantity of fresh milk is added. The mixture is curdled in round recipients called “fascelle”. Here it dries for almost a month and afterwards ricotta matures in dark room with high humid levels.
